From a single kitchen in Washington, Utah, to a beloved coastal dining destination across the United States — here's how costavida grew into the brand you know today.

2008

The First Kitchen

Costa Vida opens its doors at 944 W Red Cliffs Dr in Washington, Utah. Founder Marco Delgado serves his grandmother's coastal recipes to a small but devoted neighborhood crowd.

2011

Menu Expansion

After overwhelming demand, Costa Vida expands its menu to include fresh bowls, signature burritos, and seasonal specials — establishing its reputation for vibrant coastal flavors.

2014

Regional Recognition

Costa Vida earns its first regional "Best Casual Dining" award and is featured in Utah Food Magazine. The brand begins attracting a loyal following far beyond Washington County.

2017

Catering Launch

We introduce full-service catering for corporate events, weddings, and private gatherings — bringing the costavida experience to tables across the entire United States.

2020

Digital Ordering

Costa Vida launches online ordering, making it easier than ever for guests to enjoy fresh food at home. Despite global challenges, we keep our community fed and connected.

Award-Winning Year

With 20+ years of culinary mastery and a lifelong love for coastal flavors, Marco founded Costa Vida to share his heritage and grandmother's legendary recipes with the world.

Sofia Reyes

A classically trained chef who studied in Mexico City and California, Sofia leads our kitchen with precision and creativity, constantly innovating Costa Vida's seasonal menu offerings.

James Hartley
